A slight twist on a Cypriot classic. A perfect vegan meal for lunch or dinner.
Ingredients
Basmati rice, lentil, caramelised onion, fried shallots with grated carrot, courgette and spring onion
Suggestion
Eat cold or, for best results heat in microwave. Remove outer sleeve. High Heat for 3 mins.
Remove the salad on the side if preferred cold.
